მომზადების დრო: 2სთ და 30წთ
შემადგენლობა:
1. ღორის ხორცი - 400 გრ
2. ძროხის ხორცი - 400 გრ
3. ხახვი - 2 დიდი თავი
4. ჭარხალი - 300 გრ
5. პომიდორი - 500 გრ
6. დაფნის ფოთოლი - 2 ცალი
7. სტაფილო - 200 გრ
8. ძმარი - 2 მლ
9. შაქარი - 20 გრ
10. ზეთი - 50 მლ
11. მარილი წიწაკა - გემოვნებით
12. ოხრახუშის ფესვები ან ნიახური
მომზადება:
- ხორცს დაასხით 4 ლიტრი წყალი და დადგით მაღალ ცეცხლზე
- მოხადეთ ქაფი და შემდეგ 1,5სთ ხარშეთ დაბალ ცეცხლზე
- ხარშვისას დაამატეთ დაფნა.
- ხახვი დაჭერით ალყა-ალყა
- სტაფილო და ჭარხალი და წერით ძალიან წვრილ, მოგრძო ნაჭრებად (არ გახეხოთ!)
- ასევე კომბოსტოც დაჭერით ძალიან წვრილად.
- როდესაც ხორცი მზად იქნება ამოიღეთ ბულიონიდან და დაჭერით წვრილ ნაჭრებად
- ბულიონში დაამატეთ მარილი და ჩაყარეთ დაჭრილი ხორცი, დაამატეთ კომბოსტო ხარშეთ მომზადებამდე
- ჭარხალი, ხახვი, სტაფილო და ოხრახუშის ფესვები ჩაყარეთ მომცრო ქვაბში ზეთთან ერთად და მოშუშეთ, თან ურიეთ რომ არ დაიწვას, დაამტეთ ბულიონი(100-150 მლ) და დაახურეთ სახურავი, მოშუშეთ დაბალ ცეცხლზე 20 წუთი, დროდადრო მოურიეთ
- პომიდორს გააცალეთ კანი, დაჭერით და დაამატეთ ბოსტნეულს შუშვის დროს, ასევე დაამატეთ შაქარი და ძმარი. შუშეთ მომზადებამდე.
- მომზადებული ბოსტნეული დაუმატეთ ბულიონს
- მზა ბორშს დაახურეთ სახურავი და ცოტა ხანს დატოვეთ
- სუფრაზე მიტანისას შეგიძლიათ დაამატოთ მწვანილი და არაჟანი.
