კუბდარი
კუბდარს სვანები ცხოვრების გემრიელ გზას უწოდებენ. საერთაშორისო კულინარიაში ის ღვეზელად მოიხსენიება, რომელიც ხორცით და ცომით მზადდება.
მაგრამ სპეციალურად Qwellynaria_სთვის მიცემულ ინტერვიუში, უშგულის მკვიდრმა განაცხადა: "კუბდარის ხორცი სვანური უნდა იყოს!!!"
შემადგენლობა:
- 300 გრ. ოდნავ ამოყვანილი მაგარი ცომი
- 250 გრ. ნაკლებცხიმიანი ხბოს რბილი ხორცი
- 100 გრ. ხახვი
- 5 გრ. წიწაკა
- 15 გრ. სვანური მარილი
- ცოტაოდენი ძირა
მომზადებება:
დავჭრათ ხორცი წვრილ კუბიკებად. ასევე ხახვიც წვრილად დავკუწოთ და შევურიოთ ხორცს სვანურ მარილთან და ძირასთან ერთად (მარილი და წიწაკა გემოვნებით). გავაბრტყელოთ ცომი, მიღებული მასა მოვათავსოთ გაბრტყელებულ ცომში, მოვუკრათ თავი და ისევ გავაბრტყელოთ. გაბრტყელების შემდეგ ცომის თავი გავხსნათ. ეს იმიტომ, რომ ცომი არ გაიბეროს. შემდეგ მოვათავსოთ ღუმელში და გამოვაცხოთ.
